Sambal Sardin Garing & Telur Dadar (Crispy Sardine Sambal & Fluffy Omelette

 Today’s recipe is a nostalgic, spicy, and super affordable meal—perfect for those quick weekday lunches. Sambal Sardin Garing paired with fluffy Telur Dadar is a match made in heaven, especially with hot white rice. Let’s dig in!


Ingredients:


For Sambal Sardin:

-1 tin of sardines in tomato sauce

-3 tbsp oil

-1 onion (sliced)

-3 cloves garlic (chopped)

-5 dried chilies (boiled & blended)

-1 tsp sugar

-Salt to taste

-A squeeze of lime



For Telur Dadar (Omelette):


-2 eggs

-1 tbsp chopped onion

-1 red chili (sliced)

-A pinch of salt

-Dash of pepper



Instructions:


1. Sambal Sardin:


Heat oil, sauté onion and garlic until golden.

Add blended chilies, cook until oil separates, 

Add sardines (slightly crushed), sugar, and salt. Stir well.

Cook until slightly dry and crispy at the edges.

Add a squeeze of lime before serving.



2. Telur Dadar:


Beat eggs with onion, chili, salt, and pepper.

Fry on medium heat until golden and fluffy.


Serve with warm rice and cucumber slices. Simple, spicy, and soul-satisfying!
