 🍲 Yayla Çorbası – Halal Turkish Yogurt Soup

Creamy, light, and full of comfort.


🧄 Ingredients (Serves 2–3):


½ cup plain yogurt

1 tbsp flour

1 egg yolk

3 tbsp rice (washed)

3 cups water or light chicken broth

Salt to taste


Butter-mint drizzle:

1 tbsp butter

½ tsp dried mint

Optional: chili flakes or sumac



🔪 Instructions:


1. Boil rice in water until soft.

2. In a bowl, whisk yogurt, flour, and egg yolk until smooth.

3. Slowly add some hot rice water to the yogurt mix to prevent curdling.

4. Pour the yogurt mixture into the rice pot, stirring continuously. Simmer gently 10 mins.

5. Add salt to taste.

6. In a small pan, melt butter. Add mint and chili flakes, sizzle 10 seconds, then pour over soup.
