Recipe: Soft & Chewy Halal Red Bean Mochi
| Time: 30 mins | Makes: 6–8 pieces
Ingredients:
1 cup glutinous rice flour
1/4 cup sugar
3/4 cup water
1/2 cup red bean paste (store-bought or homemade)
1/4 cup cornstarch or potato starch (for dusting)
A pinch of salt
Instructions:
1. Make the mochi dough:
In a microwave-safe bowl, mix glutinous rice flour, sugar, salt, and water until smooth.
2. Cook:
Microwave for 1 minute. Stir. Microwave again for 1 more minute, then stir. Finally, cook 30–60 seconds more until dough is thick and translucent.
(Or steam for 15–20 mins if you don’t use a microwave.)
3. Cool & shape:
Let the dough cool slightly. Dust hands and surface with cornstarch. Divide into small balls.
4. Fill:
Flatten a ball, place 1 tsp red bean paste in center, and pinch to seal. Roll gently into smooth mochi.
5. Serve or chill:
Best eaten fresh or stored in fridge with light wrap.
