-1½ cups dried white beans (or 2 cans, drained)

-1 medium onion, chopped

-2 tbsp olive oil or butter

-1 tbsp tomato paste

-1 tsp paprika

-Salt and pepper to taste

-3 cups water or broth


Optional: chopped parsley, chili flakes, or lamb/beef pieces



Instructions:


1. Soak dried beans overnight, then boil until soft (or use canned beans for speed).


2. In a pot, sauté onion in olive oil until translucent.


3. Add tomato paste and paprika, cook for 2 mins.


4. Add beans, salt, pepper, and broth. Simmer for 30 mins until rich and thick.
