Recipe: Kacang Phol (Halal Malaysian Fava Bean Stew)
Servings: 2 | Time: 30–40 mins
Ingredients:
1 can fava beans or broad beans
150g minced beef
1 small red onion – chopped
2 cloves garlic – minced
1 tsp chili paste or sambal (optional for heat)
1 tbsp tomato sauce or puree
1/2 tsp cumin powder (optional)
Salt & black pepper to taste
1 tbsp oil
Toppings & Sides:
1 fried egg per plate
Chopped onions + green chili + lime wedge
Toasted bread or baguette slices
Instructions:
1. Sauté aromatics:
Heat oil, sauté onions and garlic until soft. Add minced beef, cook until browned.
2. Add flavor:
Stir in chili paste, tomato puree, cumin, salt & pepper. Cook until aromatic.
3. Add beans:
Pour in the canned beans (with some liquid). Simmer for 10–15 mins until slightly thickened.
4. Serve:
Plate up with a fried egg on top, fresh chopped onion & green chili, and lime on the side. Toasted bread for dipping is a must!
