Recipe: Crispy Cheese Börek (Halal, Phyllo-Based)


Servings: 2–3 portions | Time: 35 mins


Ingredients:


-6–8 sheets phyllo dough (store-bought) 

-150g feta cheese or any crumbly cheese 

-1 egg 

-1 tbsp yogurt (optional for creamy texture) 

-1 tbsp butter or oil 

Pinch of black pepper or dried herbs (oregano, parsley) – optional



Instructions:


1. Prepare the filling:

In a bowl, crumble cheese. Mix in 1 beaten egg and yogurt (if using). Add herbs or pepper if you like.


2. Layer the pastry:

Lay 1 sheet of phyllo on a clean surface. Lightly brush with melted butter or oil. Layer another sheet on top. Repeat until 3–4 layers thick.


3. Add the filling:

Spoon cheese mixture along the edge. Roll up gently into a log or coil (you can also fold like a triangle).


4. Bake:

Preheat oven to 180°C. Brush the top with more butter or egg wash. Bake for 20–25 mins until golden and crisp.
