Chicken Kuzi is a rich, flavorful Malaysian-Middle Eastern fusion dish that’s perfect for our halal segment. It’s aromatic, tender, and can be served with rice, bread, or even roti jala.
Halal Chicken Kuzi (Kuzi Ayam)
Servings: 3–4
Cook Time: 45 mins
Ingredients:
500g chicken (bone-in preferred)
1 large onion (sliced)
3 garlic cloves (minced)
1 inch ginger (minced)
1 tbsp kuzi spice mix or:
1 tsp cumin
1 tsp coriander
1/2 tsp cinnamon
1/2 tsp turmeric
1 tbsp tomato paste
2 tbsp evaporated milk (or coconut milk)
1 potato (cubed)
1 tbsp raisins & cashew nut (optional)
1 tbsp ghee or oil
Salt & sugar to taste
Water
Instructions:
1. Sauté Base:
Heat ghee/oil. Sauté onions until caramelized. Add garlic and ginger. Cook until fragrant.
2. Add Spices & Tomato Paste:
Stir in kuzi spices and tomato paste. Fry until oil separates.
3. Cook Chicken:
Add chicken and coat well. Add a splash of water. Simmer until half-cooked.
4. Add Milk & Potato:
Stir in milk and cubed potato. Add raisins if using. Simmer on low heat until chicken is tender and gravy thickens.
5. Season:
Add salt and sugar to balance flavor. Adjust creaminess or sweetness to your taste.
