Halal Recipe : Cheesy Chicken Pilaf

Recipe: Cheesy Chicken Pilaf


Halal| Servings: 2–3 | Time: 35 mins


Ingredients:


1 cup basmati or long grain rice 

200g boneless chicken breast or thigh 

1/2 cup shredded cheese (mozzarella or cheddar) 

1 small onion, chopped 

2 cloves garlic, minced

1/2 tsp cumin or paprika (optional)

1 tbsp butter or oil 

Salt & pepper

2 cups water or chicken stock



Instructions:


1. Cook the chicken:

In a pan with butter/oil, sauté onions and garlic. Add diced chicken. Season with salt, pepper, and spices. Cook until golden.

2. Add rice:

Stir in the rinsed rice. Mix well to coat the grains with the flavors.

3. Simmer:

Add water or stock. Bring to a boil, then cover and simmer on low until rice is fluffy (15–18 mins).

4. Make it cheesy:

When the rice is cooked, turn off heat. Sprinkle cheese on top, cover again for 5 minutes until it melts. Fluff and mix lightly.
