SIMIT - It’s like a cross between a bagel and a pretzel, super affordable, filling, and perfect with tea, cheese, or even dipped in soup.
Ingredients:
-2 cups all-purpose flour
-1 tsp instant yeast
-1 tsp sugar
-1/2 tsp salt
-3/4 cup warm water
-1 tbsp molasses or honey (optional for coating)
-2–3 tbsp sesame seeds
-1 tsp oil (for brushing or bowl greasing)
Instructions:
1. Activate yeast:
Mix warm water, sugar, and yeast. Let it sit 5–10 mins until bubbly.
2. Make the dough:
Add flour and salt. Knead until smooth and elastic (about 8–10 mins).
Cover and let it rise for 1 hour until doubled.
3. Shape the simit:
Divide dough into 4 pieces. Roll each into a rope, fold in half, twist, and form a ring. Pinch ends to seal.
4. Coat the rings:
Mix molasses or honey with 2 tbsp water. Dip rings in the mixture, then coat with sesame seeds.
5. Bake:
Preheat oven to 200°C. Place rings on baking tray lined with paper.
Bake for 20–25 mins until deep golden and crisp on the outside.
Serving Tip:
Serve warm with tea, olives, cheese, or spread with butter and jam.
Tastes great fresh or lightly toasted the next day.
