 Recipe: Turkish Ramazan Pidesi (Ramadan Bread)

Time: About 2 hours (includes rising) | Makes: 1 large pide


Ingredients:


-2 cups all-purpose flour 

-1 tsp instant yeast 

-1 tsp sugar 

-1/2 tsp salt 

-3/4 cup warm water 

-2 tbsp plain yogurt 

-1 tbsp olive oil or regular oil 

-1 egg yolk (for brushing) 

-2 tbsp sesame seeds or nigella seeds 


Instructions:


1. Activate yeast:

In a bowl, mix warm water, sugar, and yeast. Let it sit 5–10 minutes until bubbly.

2. Make the dough:

Add flour, salt, yogurt, and olive oil. Mix and knead until soft and elastic (about 8–10 minutes).

3. First rise:

Cover and rest the dough for 1 hour, or until doubled.

4. Shape the bread:

Place dough on a baking tray lined with paper. Flatten gently into a thick circle (about 1.5–2 cm thick).

Use your fingers to make a deep square or diamond pattern on the top.

5. Second rise:

Let it rise again for 20–30 minutes.

6. Brush and top:

Brush gently with beaten egg yolk. Sprinkle sesame and/or nigella seeds over the top.

7. Bake:

Bake at 200°C for 20–25 minutes until golden brown and puffed.



Serving Tip:

Serve warm with butter, cheese, olives, soup, or just tear and eat after Maghrib—perfect suhoor and iftar food!
