Time: 40–45 mins | Makes: 1 small loaf or 6 slices


Ingredients:


-1 cup cornmeal (fine or medium grind) 

-1/2 cup all-purpose flour 

-1 tsp baking powder 

-1/2 tsp salt 

-1 cup plain yogurt or water 

-2 tbsp oil or melted butter 

-Optional: 1 chopped green chili or 1/4 cup crumbled feta 



Instructions:


1. Preheat oven:

180°C. Grease a small round or square baking pan.


2. Mix dry ingredients:

In a bowl, combine cornmeal, flour, baking powder, and salt.


3. Add wet ingredients:

Stir in yogurt (or water) and oil until a thick batter forms. If using chili or feta, fold it in now.


4. Pour and bake:

Spread batter into pan evenly. Bake for 30–35 mins until golden and set.


5. Cool slightly before slicing.

Serve warm with butter, honey, soup, or cheese on the side.
