Ingredients:
-2 chicken thighs or drumsticks
-1 cup basmati rice
-1 medium tomato (chopped)
-1 small onion (sliced)
-2 cloves garlic
-1 tbsp tomato paste
-2 tbsp oil
-1 small cinnamon stick
-2–3 cloves
-2 cardamom pods
-1/2 tsp ground cumin
-1/2 tsp ground coriander
-Salt & pepper to taste
-2 cups water or broth
Optional garnish:
Raisins, roasted almonds, coriander
Instructions:
1. Sear the chicken:
In a pot, heat oil. Add chicken and brown on both sides. Remove and set aside.
2. Sauté base:
In the same pot, sauté onion until golden. Add garlic, tomato, and tomato paste. Cook until soft.
3. Add spices:
Add cinnamon, cloves, cardamom, cumin, coriander, salt & pepper. Stir well.
4. Combine:
Add chicken back to the pot. Pour in water or broth. Bring to a boil, then cover and simmer for 20–25 mins.
5. Add rice:
Add rinsed rice directly into the pot. Stir gently. Cover and cook on low for another 15–20 mins until rice is fluffy and water is absorbed.
6. Serve:
Fluff rice, place chicken on top. Garnish with raisins, almonds, or herbs if desired.
