Ingredients:
-1 can chickpeas
-1 medium carrot
-1 bell pepper
-1 small onion
-2 cloves garlic
-2 tbsp soy sauce
-1 tbsp oil (any cooking oil)
-Optional: rice or noodles.
Instructions:
1. Drain and rinse chickpeas.
2. Chop the carrot, bell pepper, and onion.
3. Heat oil in a pan over medium heat. Add garlic and onion, cook for 2 minutes.
4. Add carrot and bell pepper, stir-fry for 5–6 minutes until soft.
5. Add chickpeas and soy sauce. Stir and cook for another 5 minutes.
6. Serve on its own or over rice/noodles if you need more carbs.
